While Hogwarts Legacy didn't include Quidditch within the game, it turns out WB had another Harry Potter game in the works focusing exclusively on this. This week, WB announced Harry Potter: Quidditch Champions, a competitive multiplayer game.
Harry Potter: Quidditch Champions is billed as a “complete, standalone Quidditch experience”. The game is being developed by Unbroken Studios and has already been in the works for “several years”. Given that this game has been planned for so long, it is entirely possible that Quidditch was dropped from Hogwarts Legacy to allow this game to have its own spotlight.

Judging from the small clip shown in the teaser, the game will use a cartoony graphics style, while Hogwarts Legacy aimed for a more realistic look.
There will be closed playtests taking place this month, which you can sign up to take part in. The game does not have an official release date yet.

KitGuru Says: We haven't really seen any gameplay yet, so we don't know if this will be worth getting excited for. With playtests happening this month though, we may end up seeing something through leaks and chances are, more information will be officially announced over the summer.
